Dr Photis Papademas, Assistant Professor – Dairy Science and Technology
Photis Papademas is Assistant Professor of Dairy Science and Tehcnology at the Department of Agricultural Sciences, Biotechnology and Food Science at the Cyprus University of Technology (CUT). He holds a BSc (Hons) in Chemistry and Food Science and a PhD in Dairy Science both from Reading University, UK. He has published numerous papers in scientific journals and he contributed with chapters in scientific books on dairy science and especially on cheese. Before joining the Department he worked for the Dairy Industry as a Quality Manager and he was a business consultant and a trainer on Food Safety Management Systems. His research interests are focused on the functionality/authenticity of dairy products, the identification, characterization, study of properties of lactic acid bacteria and finally the production of functional fermented milk.
Of special interest is the study of non-cow milk species such as goat and donkey. For a full CV please click here.
Maria Aspri- PhD Student
Maria has been an active member of the lab since 2013. Her PhD thesis entails the study of lactic acid bacteria isolated from donkey milk and the production of a functional milk drink. For more about her see her short CV and her project in Brief.
